When you open a standard sampling valve on a pressurized tank, the beer shoots out rapidly. The sudden drop in pressure causes the dissolved CO2 to break out of the liquid violently, leaving you with a cup full of foam and no actual beer to test with your hydrometer. The defoaming pigtail forces the beer to travel through a long, narrow coiled tube. This creates friction, which slows down the flow rate and allows the CO2 to escape gently. By the time the beer exits the coil, it pours as a clean, liquid sample.
Immediate Rinsing: After taking a sample, it is critical to flush the valve and the coil with hot water or a brewery-approved sanitizer immediately to prevent yeast or sugars from drying inside the narrow tube.
